Deer and Turkey Bolognese

What do you do when you have ground turkey and ground venison that you need to use quickly? Make spaghetti sauce with gluten free noodles (no need to give myself a Hashimoto’s flare up!). Did you know that gluten activates autoimmune conditions, even if you don’t test positive for gluten antibodies? Both my husband and I have had crazy schedules lately. He’s in a field exercise that has him working long hours. If I’m not working I’m at community theatre rehearsals. He was sweet enough to cook again this week. He’s pretty amazing like that! I’m constantly amazed at how lucky I am to be married to such a wonderful guy! Excuse the tangent, I couldn’t help myself 🙂 .

Now, to the recipe:

Ingredients

  • 1 lb ground venison
  • 1 lb ground turkey (free from hormones & antibiotics)
  • 8 organic Roma tomatoes
  • 2 organic Sweet Bell Peppers
  • ½ organic red onion
  • 1 foot of organic garlic
  • 1 Tbsp Pink Himalayan Sea Salt
  • 2 Tbsp organic Black Pepper
  • 2 Tbsp organic Fresh Oregano
  • 3 Tbsp organic Italian seasoning

Directions

  • Place tomatoes, peppers, onion, & garlic in a large pot with just enough water to cover them all
  • Boil until the skins begin to peel off the tomatoes & peppers
  • Turn heat to low
  • Blend with an immersion blender until pureed
  • Turn the heat back up to medium-high & add the seasonings
  • Place the raw, thawed meat in the pot
  • Stir continuously until meat breaks apart
  • We served with gluten free rice noodles, but you could use zoodles if you need grain free or regular noodles if you aren’t gluten free

You may notice that we used as mostly organic ingredients.  We are fortunate enough to have a chain grocery store in town that has a reasonably-priced organic line.  They have a wide variety of items that are not much more in cost than traditional items.  If you can’t afford to buy all organic, I recommend buying organic animal products as the first priority.  You definitely want to avoid animals that are raised in factory farms, fed GMOs, and shot up with hormones and antibiotics.  Studies have shown that animals fed a proper diet, raised on a proper farm and not fed hormones & unnecessary antibiotics are healthier, have higher amounts of vitamins and minerals, and have more Omega 3 acids in relation to Omega 6 acids.  (Interesting article on this topic). For fruits and vegetables, I recommend focusing on buying the dirty dozen in organic and buy the clean fifteen in non-organic versions.   Even if you don’t buy anything organic, you’re still better off making fresh food than eating processed.  That’s what clean eating is all about – eating real food instead of processed.  Because many people aren’t sure where to start, that’s why I love sharing our clean eating recipes!

This made a huge pot of sauce! Since it’s just the two of us, there’s no way we could eat it all this week, so we froze at least half of it in quart sized plastic bags. Be sure you wait until the food is cold – you never want to put hot food in plastic because it leeches chemicals into the food. To thaw the sauce, I recommend letting it sit out until it thaws enough to open the bag & put the sauce in a pot to heat it up. You can portion these depending on how many people you have in the house. It’s nice to be able to thaw only what you need!
